THE JOB:
At Michael Mina Bellagio, where extraordinary meets authentic, we are seeking a passionate General Manager to manage all aspects of our operations. In this pivotal role, you will provide strategic direction to the Assistant General Manager and service team, ensuring impeccable execution of our menu featuring an unmatched variety of expertly curated, flown-in-daily seafood. Your leadership will be crucial in achieving operational and financial goals while optimizing reservation channels and enhancing staff performance and development. You will implement food and beverage initiatives that reflect our commitment to innovation and excellence, maintaining the highest standards of facility management. As the driving force behind delivering unforgettable guest experiences—complete with tableside preparations and expert wine pairings—you'll craft a memorable culinary journey that keeps guests returning for more.
THE DAY-TO-DAY:
Own, lead, and oversee daily restaurant operations, including labor productivity, scheduling, inventory control, guest service standards, and marketing strategy execution to drive both short-term and long-term profitability. Co-own the restaurant’s business plan with the Executive Chef and represent the restaurant in divisional, property, and corporate meetings.
Execute and enforce policies, operating procedures, pricing initiatives, training programs, directives, menus, and rules and regulations for restaurant staff. Ensure successful implementation of F&B and company-wide initiatives and maintain the highest standards of health, sanitation, and cleanliness across all areas. Oversee completion of all required company compliance training by restaurant staff.
Manage Human Resources responsibilities, including creating a positive work environment that promotes teamwork, provides coaching and performance feedback, recognizes employee contributions, and ensures mutual respect and satisfaction. Lead hiring, training, and succession planning processes aligned with the company’s diversity commitment and compliance with company policies, employment law, and collective bargaining agreements.
Interact with guests regularly to ensure satisfaction and enhance the dining experience. Address and resolve guest complaints promptly and manage restaurant feedback channels in accordance with company practices. Collaborate with the Executive Chef and culinary team to ensure a seamless service experience between the kitchen and dining room.
Maintain thorough knowledge of the venue’s food and beverage products, menu items, and operational equipment to support daily duties effectively.

THE IDEAL CANDIDATE:
High School Diploma or GED
2+ Years of Prior Relevant Experience
Working knowledge of Point of Sale (POS) systems and operations
