Position: Head Chef. Salary: $58,080.00/Salaried/Negotiable (Various Hours). Location: Gaming Division. Reports to: Assistant Director of Hospitality
Responsibilities:
- Develop menus for buffets, catering, and venues.
· Coordinate and control the total function of the food service area pertaining to food production and quality assurance.
· Monitors and enforce organizational and departmental safety policies and health department standards.
- Oversee product consistency and make necessary modifications according to business needs. Monitors waste and overproduction of food products, utilizes leftovers, ensures proper rotation and quality control.
- Stay up to date on industry standards and practices, recommending changes.
- Supervision of Sous Chefs, cooks, and dishwashers.
- Oversee training of new team members to help them achieve higher status, organizes and presides over meetings with food service staff.
- Role model the performance and behaviors expected of team members.
- Must create recipe books for food items served and teach the team recipes currently in use.
- Responsible for resolving customer complaints in a positive and professional manner.
- Responsible for conducting employee evaluations and counseling sessions. Including corrective actions.
- Responsible for the normal flow of operation in the kitchen.
- Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.

Qualifications & Education:
- High School Diploma or GED required.
- Applicant must have been an Executive Chef, Head Chef or comparable leadership position within a high-volume restaurant, hotel or casino industry, with experience managing multiple venues.
- At least five (5) years of culinary-related management experience is required.
- Must be able to work collaboratively with Assistant Director of Hospitality, front of house Supervisors, Sous Chefs and Administrative Chef.
- Must have the ability to be mobile 100% of the time in a fast paced and busy environment.
- Above-average problem-solving skills.
- Must be able to properly cost menu items.
- Excellent verbal and written communication skills.
- Must be proficient in Microsoft Office and email.
- Must possess and demonstrate strong decision-making skills.
- Ability to work effectively under pressure and meet multiple deadlines.
- Must have Serv Safe certification or obtain it within six (6) months of employment.
- Must obtain and maintain a Gaming License.
- Must follow MICS and TICS requirements per gaming division.
- Valid driver’s license, reliable transportation, and insurance required. Must obtain a Wisconsin’s driver license within 30 days of employment if applicant has an out-of-state driver’s license. Must meet and maintain the eligibility to operate a personal or tribal vehicle under the drier acceptability guidelines as established by Mohican Insurance.
- Pass a full background check.
- Must successfully pass a food tasting test and food costing exam.
Work Conditions:
- Must be able to walk, sit, stand, use hands to handle or feel, reach with arms, talk and hear.
- Must be able to lift and/or move up to fifty (50) pounds on a regular basis.
- Specific vision abilities required, including close vision, distance vision, peripheral vision, color vision, and depth perception.
- Evening and/or weekend work required.
- Work environment requires excellent personal hygiene.
- Work is in a smoke-free environment with varied noise and dust levels varying by location.
