PM Garde Manager
Capital City Club Brookhaven's Culinary Department is looking to hire an enthusiastic, self-motivated, and team-focused individual for our night-time Line Cook position. This position is Full-time with flexibility if there is interest in part-time. The position includes health vision, life, dental insurance, 401(k) with a company match, hot meals, and uniforms. The position is high volume with great cross-training opportunities on sauté and grill stations.
Job Task:
- Supervises pantry crew in the preparation of salads, dressings, etc.
- Requisitions food supplies necessary to produce the items on the menu.
- Adheres to state and local health and safety regulations.
- Maintains the highest sanitary standards.
- Notifies sous chef in advance of expected shortages.
- Maintains neat professional appearance and observes personal cleanliness rules at all times.
- Ensures that work area and equipment are clean and sanitary.
- Covers, dates and neatly stores re-usable leftover products.
- Assists with other duties as instructed by the sous chef and the executive chef.
Required Qualifications:
- 3+ years of professional culinary experience specializing in cold food preparation.
- Expertise in salads, appetizers, dressings, terrines, pâtés, and cold buffet presentation.
- Strong knife skills and precision in portioning, garnishing, and plating.
- Deep knowledge of food safety, HACCP standards, and kitchen sanitation.
- Skilled in inventory management, labeling, and product rotation (FIFO).
- Creative eye for visual presentation and attention to detail.
- Team-oriented with excellent communication and time management abilities.
- Flexible and reliable — able to work long hours, weekends, and high-volume events.
