Summary
The Final Rail Lead is responsible for overseeing the final rail operations on the harvest floor, ensuring carcass handling, trimming, tagging, and identification are performed accurately, safely, and in compliance with USDA regulations and company quality standards. This position coordinates the work of final rail employees, maintains product integrity, and ensures a clean, efficient, and safe work environment while supporting production goals and animal welfare standards.
Daily Responsibilities:
- Supervise and coordinate the daily activities of employees assigned to the final rail area.
- Monitor the flow of carcasses through the final rail process, ensuring efficiency, product quality, and regulatory compliance.
- Verify correct tagging, labeling, and identification of carcasses according to company and USDA requirements.
- Ensure trimming, inspection, and presentation meet quality assurance standards.
- Monitor employee performance, attendance, and adherence to safety and sanitation procedures.
- Communicate with harvest floor supervisors, USDA inspectors, and QA personnel to maintain compliance and resolve issues promptly.
- Train and mentor final rail employees on proper cutting, trimming, and carcass handling techniques.
- Maintain accurate records of production counts, downgrades, rework, and other relevant metrics.
- Oversee cleaning and sanitation of final rail equipment and work areas at the end of each shift.
- Ensure all employees follow PPE, GMP, and food safety guidelines at all times.
- Report any equipment malfunctions, product nonconformities, or safety concerns immediately to the Harvest Supervisor or Maintenance Department.
- Support continuous improvement by suggesting operational or safety enhancements.
Qualifications:
- Minimum 1–2 years of experience in beef processing or slaughter operations, with knowledge of harvest floor flow and final rail procedures.
- Previous lead or supervisory experience preferred.
- Strong understanding of USDA regulations, HACCP, and food safety requirements.
- Ability to communicate clearly, direct team members, and maintain high production and safety standards.
- Strong attention to detail, organizational skills, and ability to multitask in a fast-paced environment.
- Basic understanding of carcass grading, yield, and defect identification preferred.
- Must speak, read, and write English; bilingual (English/Spanish) preferred.
Physical Requirements:
- Ability to stand, walk, bend, reach, and lift up to 50 lbs. throughout the workday.
- Must be able to work in cold, damp, and fast-paced production environments.
- Must wear all required PPE and comply with food safety and worker safety requirements.
- Ability to work overtime and weekends as needed.
