Food and Beverage Cost Controller at Cheeca Lodge & Spa

 

Join Our Finance Team: Cheeca Lodge & Spa, a luxury resort in Islamorada, FL, is seeking an experienced Food and Beverage Cost Controller. This role will oversee the financial administration of all F&B operations, including Morada Bay Beach Café and Pierre’s. The Cost Controller will ensure accurate financial tracking, cost control, and vendor management, reporting directly to the Complex Director of Finance.

Primary Duties & Responsibilities:

  • Oversee the financial administration of all F&B operations, with an initial focus on Morada Bay Café & Pierre’s.
  • Lead and manage the Birchstreet purchase order process, ensuring compliance, proper receiving of goods, and daily transfers.
  • Track daily revenues, average checks, and ensure accurate reporting.
  • Use Avero to verify voids in POS systems and maximize server sales.
  • Validate menu pricing in POS systems and ensure accuracy.
  • Lead monthly inventory counts for food and beverage outlets and derive real-time daily costs.
  • Ensure integrity of cash and product handling, generate end-of-shift POS reports, and conduct spot checks at F&B outlets.
  • Review forecast vs. actuals monthly and assist in financial reporting and forecasting.
  • Work with vendors like Sysco and Source One for optimal procurement, focusing on delivery frequency, drop size, and favorable pricing through contracted rebates.
  • Assist culinarians and management with menu costing, event quoting, and pricing evaluations.

Required Qualifications:

  • Proven experience in food and beverage cost control, preferably in hospitality.
  • Strong financial acumen and experience with procurement processes.
  • Proficiency in Birchstreet, Avero, and POS systems.
  • Strong communication and leadership skills, with the ability to work independently.
  • Experience working with vendors and ensuring favorable pricing.
  • Knowledge of financial reporting, inventory management, and cost control techniques.
