JOB DUTIES AND RESPONSIBILITIES
- Assist the Executive Chef with daily kitchen operations, including food preparation, event execution, staff supervision, ordering and inventory, and menu development
- Proven experience planning and executing large plated and buffet banquets
- Ensure cleanliness and sanitation in the kitchen and adjacent areas is maintained to standard at all times
- Creative menu planning to adjust to guest needs
- Overseeing food preparation and proper planning for execution of events and a la carte service
- Checking quality and accuracy of food deliveries
- Ordering all food and cleaning supplies and maintaining proper supply levels
- Maintaining costs within budgeted levels
- Manage labor costs, schedules and productivity
- Hiring, coaching and performance management of direct reports with and in absence of Executive Chef
- Interacting positively and professionally with guests to resolve issues
- Acting as Manager on Duty as required
- Perform various other duties as assigned to meet business objectives
EDUCATION AND EXPERIENCE
- Formal culinary degree/certification preferred
- Minimum of two (2) years of experience in a hotel culinary leadership role
- Valid Food Safety, Sanitation, and Food Manager certifications required
KNOWLEDGE, SKILLS AND ABILITIES
- Strong Organizational skills
- Proven leadership ability
- Strong Culinary experience in both a la carte and banquet
- Ability to exceed expectations of guests
- Reliability and Flexibility with schedule
- Excellent role model for all team members
