This position manages the day-to-day operations of the bar/beverage program. Responsible for leading, planning, directing, and coordinating activities related to the development and execution of the bar/beverage operations.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Leads and directs the daily operations of all bars throughout the property, with primary responsibility for managing beverage prep, restaurant, and bars.
- Leads menu and drink development through R&D sessions and sales mix evaluations.
- Creates and maintains beverage recipes and specifications. Maintains liquor cost control through enforcement and accountability, including updating all beverage costs within the beverage inventory system.
- Trains and oversees prep staff.
- Schedules Bartenders as required and ensures appropriate staffing levels in line with payroll, budget, guest flow, and guest needs.
- Manages the upkeep of kegs, coolers, freezers, dishwashers, and glasswashers.
- Orders liquor, wine, beer, and other products and supplies for the department. Cultivates exceptional vendor relations to pursue aggressive pricing, quality
- Develops and maintains Master Recipe Specification Book for all signature and specialty drinks.
- Thoroughly knowledgeable about spirits, spirits production, classic cocktails, and cocktail culture. Cultivates detailed knowledge of all wine/liquor/beer within operation, through research and tasting.
- Understands food and beverage controls including days on hand, perpetual inventory, cost controls, beverage potentials, mix of sales analysis and period end inventory. Responsible for maintaining controlled inventory levels, such that all listed wines/liquor/beer, batched cocktails, and kegged cocktails are on hand for service and events. Conducts inventories as needed for cost controls, accurate financial reports, and to ensure adequate supplies are available for business requirements.
- Ensures implementation and adherence to cash handling and alcohol service policies through training and support and maintains cost controls through enforcement and accountability.
- Maintains point of sale database and accuracy of information, ensuring items and pricing are updated regularly and changes communicated with the staff.
- Reviews financial transactions and monitors budget to ensure efficient operations and maximum profits, including preparing daily, weekly and monthly financial reports. Able to prepare departmental budget, understand P&L statements, prepare FF&E and capital orders, and other financial data as required.
- Completes administrative duties needed to perform job functions as required (e.g., recruits, interviews, hires, schedules, daily and weekly payroll, liquor/beer/wine, supplies, and equipment orders, work orders, memorandums, etc.).
- Exercises reasonable care, performs required maintenance, and ensures operating instructions, safety standards, and guidelines are followed for equipment and facility assets.
- Completes all other duties as assigned.
Qualifications
MINIMUM REQUIREMENTS
- 3-5 years of related bar management experience in a high-volume, high energy, food and beverage environment.
- Strong competency in Point-of-Sale systems and working knowledge of office software,
- Strong knowledge of state and federal laws and regulations related to food, safety, sanitation, alcohol service, and employment.
- While performing the duties of this job, the employee is regularly required to position self to move about.
- The employee frequently is required to operate and use specific tools and equipment; and communicate with guests, employees, owners, and management.
- The employee may need to travel (locally) to other properties occasionally.
- Specific vision abilities required by this job include close vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
PREFERRED SKILLS & QUALIFICATIONS
- Associate degree preferably in hospitality or business management, or equivalent combination of education and experience.
- Food Protection Managers and Alcohol Service certification or ability to obtain within 30 days of hire.
