Summary:
Monitor the cheese in cellars for proper aging and perform quality swabbing
Essential Duties and Responsibilities
Monitor cheese in cellars and document room conditions for temperature, ammonia levels, moisture, and air flow
Maintain, program, and troubleshoot smearing machines
Perform minor maintenance on smearing machines
Complete routine department walk throughs
Clean and maintain equipment and cheese boards
Ensure all cheese is removed from brine in a timely manner and samples are taken and given to the Quality Assurance Department
Perform tray-in/tray-out according to posted schedule
Utilize the JD Edwards system for inventory tracking and managing work orders
Attend staff and department meetings
May be required to work overtime, weekends, and holidays if deemed necessary
Performs all other duties as assigned
Report any and all injuries to your supervisor or manager at the time of injury.
Complete all required training in a timely manner
Adhere to ERU food safety policies and all government food safety and sanitation regulations (ex. FDA, HACCP, GMP, OSHA)
Qualifications, Skills, Education and/or Experience
Hand jack, scissors license or certification within 6 months of hire
Process flow knowledge of cheesemaking, prep, and packaging
Ability to add, subtract, multiply, and divide whole numbers
Basic computer skills including e-mail, word processing, and spreadsheets
Experience with JD Edwards software
Excellent written and verbal communication skills
Ability to work with automated equipment
Ability to multi-task and prioritize under pressure
Ability to work in cross-functional teams
History of good attendance
Excellent organization and problem-solving skills
Detail-oriented nature
Ability to work with minimum supervision
Skills & Competencies:
Strong communication and interpersonal skills; ability to coach and mentor others.
Solid understanding of cheese conversion equipment and procedures.
Familiarity with safety practices, GMPs, and quality control standards.
Basic knowledge of training systems and documentation tools (e.g., Alchemy, Q-Matrix) a plus.
Dependable, detail-oriented, and capable of working independently or in a team environment.
Willingness to work across shifts or flexible hours based on training needs.
