About the Department

The purpose of the class is to supervise and participate in the preparation and service of food in the County detention facility; to maintain inventory of foods and supplies; to maintain the cleanliness of food service areas and equipment; and to perform related work as assigned. The class works within a general outline of work to be performed and develops work methods and sequences under general supervision.

 

Position Duties

ESSENTIAL JOB FUNCTIONS
• Assists in maintaining the security and safety of the kitchen and dining areas, inmates and staff through implementation of established policies and procedures.
• Supervises assigned staff. Supervisory duties include instructing; assigning, reviewing and planning work of others; maintaining standards; coordinating activities; selecting new
employees; acting on employee problems; recommending and approving employee discipline; and recommending discharge as appropriate.
• Oversees preparing and serving food; instructing; maintaining standards; coordinating activities; and allocating personnel; Offers advice and assistance as needed.
• Schedules civilian workers and inmate workers assigned to the kitchen area.
• Trains workers to prepare food and perform other kitchen tasks.
• Oversees the inmate food preparation process.
• Plans nutritious meals for inmates; plans special diets as required.
• Requisitions foods, supplies and equipment as needed; inspects all incoming items for proper packing size and to note any damage; stocks foods and supplies; and takes inventory; reports discrepancies to supervisor.
• Assists workers in the preparation and service of meals.
• Oversees and participates in the cleaning and sanitizing of kitchen and dining areas and the washing of kitchen utensils and equipment.
• Ensures that all food preparation and storage, equipment maintenance and cleaning activities meet Health Department inspection requirements.
• Ensures that essential areas are properly secured such as the coolers, freezer, bathrooms, storage room, exit doors and the office.
• Submits reports regarding incidents as needed.
• Performs routine clerical work as required, including maintaining lists and logs, preparing work records and reports, answering the telephone, etc.
• Attends training, seminars, meetings, etc., to maintain job knowledge and skills.
• Performs other related job duties as assigned.

Minimum Qualifications

Education and Experience:
High school diploma or GED.
Requires at least one (1) year of experience in food service, preferably at a correctional facility.
