Delaware North's Patina Group is hiring for a full-time or part-time Butcher to join our team at Lincoln Ristorante in New York, New York. As a Butcher, you will prepare, package, and market meat for retail sale.

Unit Description:

Responsibilities:
  • Prepare and portion meat products according to quality standards, safety guidelines, and department procedures, ensuring proper storage, freshness, and temperature control. 
  • Maintain a clean, organized, and sanitized workstation, including coolers, cutting tools, and equipment, while keeping all areas sufficiently stocked. 
  • Follow waste control protocols, accurately recording spoilage and trimming waste as required. 
  • Perform opening, closing, and side duties, including inventory checks and restocking, in alignment with operational guidelines.
Qualifications:
  • Minimum of 2 years’ experience in a butcher or meat preparation role, preferably in a foodservice or retail environment. 
  • Ability to read and follow prep sheets, cutting instructions, and product specifications accurately. 
  • Basic math skills are required to calculate weights, portion sizes, and inventory counts.
Physical Requirements:
  • Must be able to lift 50 lbs or more, reach up to seven feet, bend, squat, and perform physically demanding tasks throughout the shift. 
  • Required to stand and walk for the entire duration of the shift, often in moderate to high noise environments. 
  • Must have strong knife skills and manual dexterity to cut, trim, debone, and portion meats with precision. 
  • Capable of operating meat processing equipment and tools, and performing tasks such as chopping, grinding, slicing, and storing. 
  • Will be exposed to variable temperatures, including refrigerated and freezer environments.
