Job Description:

The Garde Manger is responsible for the preparation and presentation of cold dishes, including salads, charcuterie, dressings, hors d'oeuvres, and other refrigerated items. This role requires a strong attention to detail, creativity, and a commitment to maintaining high standards of cleanliness, organization, and food safety. The ideal candidate will have experience in a fast-paced kitchen environment and a passion for precision and presentation.

The Day to Day:

  • Prepare and plate all cold menu items such as  salads, dressings, cold appetizers, terrines, pâtés, and charcuterie.
  • Maintain proper portion control and presentation according to restaurant standards.
  • Ensure all ingredients are fresh, properly stored, and rotated (FIFO).
  • Assist in the creation of daily specials and seasonal menu items related to the Garde Manger station.
  • Maintain cleanliness and sanitation of the station, equipment, and cold storage areas.
  • Follow all food safety and hygiene regulations.
  • Work closely with the Chef du Cuisine and Sous Chefs to ensure smooth kitchen operations.
  • Monitor inventory levels for the Garde Manger station and communicate ordering needs.
  • Support banquet and catering prep as required (e.g., canapé trays, cheese boards, cold buffets).
  • Set up and break down station at the beginning and end of each shift.
Qualifications:
  • Minimum of 1 years of kitchen experience or 2 years of post secondary education
  • Ability to communicate effectively with co-workers
  • Have a professional attitude and appearance at all times
  • Be able to work weekdays/weekends/holidays
  • Must be legally able to work in Canada
