In this role, you will be responsible for supervising the dining team and utilizing expertise in wine to create and enhance an unforgettable dining experience for members and guests. Responsibilities to include menu, cellar, and inventory maintenance, staff education, floor shifts, pre-shift trainings, private dinner ideation, client list creation, and clean integrations with inputting new VPIs with Purchasing and Accounting departments.
The ideal candidate will be outgoing, professional, and a team player with a great attitude, strong work ethic, and passion for delivering exceptional experiences. Must have at least three years of food and beverage experience, with prior supervisory experience in the food and beverage industry preferred. A strong command of food service operations, wine knowledge, service etiquette, and food and beverage cost control procedures is essential. Experience in a high-end or luxury resort or club environment is also highly desirable.
- Must have a valid driver’s license with no traffic violations in the last 3 years.

JOB DETAILS
Responsibilities:
- Supervise the staff, on the floor, when needed. This may include any/all outlets and any/all scheduled services and/or events.
- Maintain high visibility in the dining room to receive members and guests and to ensure prompt, efficient, and knowledgeable service. While the primary function of the position is as a sommelier, you will also be expected to perform as a leader, and to aid the service staff as needed.
- Inspect Clubhouse and breeze walks daily prior to opening, and again at closing to ascertain any maintenance, repairs, or additional clean-up needs.
- Responsible for the completion of all opening and closing duties for the day, and also for all team members in areas of responsibility.
- Assist the Clubhouse Manager with training and developing the dining staff through ongoing education. Conduct staff wine tastings.
- Pair and suggest wines that will best complement menu items and align with their preferences and budget.
- Answer guest questions or concerns regarding the origin, vintage, and style of various wines.
- Present and serve wine. Decant wines, particularly red wines over 10 years old, accordingly.
- Educate members and staff on the proper ways to drink and enjoy wine.
- Work with the Chef de Cuisine to create wine and food pairings. Ensure coordinated efforts provide a year-round “world-class” experience for the members and guests.
- Work closely with the Clubhouse Manager to design and implement wine promotions and incentive programs.
- Create a diverse menu of wines at price points for all diners.
- Responsible for creating new wine items within TEI, or corresponding POS system. Also responsible for clean communication with Accounting and Purchasing departments alike.
- Cultivate positive relationships with distributors and vendors.
- Properly store wine and manage the inventory of the wine cellar. Notify the Engineering Department of any faults.
- Be a leader among our dining room staff.
- Promote and maximize food and wine sales potential via team member suggestive selling.
- Promote all food and beverage special events in coordination with the Concierge.
- Follow all state and local laws for serving alcohol responsibly.
- Serve our members in accordance with Desert Mountain standards of Food & Beverage quality.
- Display hospitality and professionalism with our members, management, and co-workers.
- Host and attend wine-tasting events. Attend mandatorily assigned external events, as needed.
- Stay abreast of the latest trends in the culinary, wine, and spirits world.
- Responsible for maintaining all standard operating procedures, in relation to wine and fine dining service standards.
- Work hand-in-hand with Wine Retail Director to further enhance wine sales across the mountain.
- Participate in Wine Dinners, large and small, and bring fresh ideas to membership
- Other duties as assigned by management.
Physical Requirements & Working Conditions:
- Required to be on feet for long periods of time.
- Required to carry, push and/or pull up to 40 pounds – Occasionally.
- Exposed to extreme cold (non-weather) and extreme heat (non-weather) – Occasionally
- Required to to work, days, nights, weekends, and holidays.
