Position Summary 

The Sous Chef at Santa Monica Proper Hotel plays a key role in ensuring the consistent preparation and high-quality presentation of food in the kitchen, adhering to the restaurant’s recipes and standards. This position supports inventory management, purchasing, and food cost control, while ensuring compliance with sanitation and food safety standards. The Sous Chef assists in managing kitchen staff, providing training and mentorship, and overseeing culinary operations to meet both guest service and financial objectives. Additionally, the role includes administrative duties such as operational reporting, staff management, and maintaining kitchen procedures and documentation. 

Position Responsibilities 

  • Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards
  • Assist in overseeing inventory, purchasing and food cost
  • Manage staffing levels to ensure that guest service, operational needs and financial objectives are met
  • Ensure compliance with food handlers and sanitation standards
  • Maintain complete knowledge of and comply with all departmental policies, procedures, and brand standards
  • Support the Chef de Cuisine in the training, mentoring, development and management of the kitchen staff and supervise/coordinate all related culinary activities
  • Assist with completing daily, weekly, and monthly management administrative duties including operations reports, financial documentation, human resources/staff management paperwork, standard operating procedures, safety and sanitations checklists, and ordering and inventory documentation

Education 

  • Culinary Degree or equivalent experience 

Experience 

  • 3 years of experience in a similar role

Skills and Competencies: 

  • Excellent critical thinking and decision-making skills
  • Able to work a flexible schedule, including evenings, weekends and holidays
  • Willingness to work long and irregular hours, including holidays, weekends, and evenings.

 Physical Demands:

  • The Sous Chef will be on their feet for extended periods, often walking or standing in the kitchen, dining areas, and storage spaces throughout their shift. The role requires constant mobility to manage kitchen operations.
  • Ability to lift, carry, and transport up to 50 pounds, including heavy pots, pans, ingredients, and kitchen equipment. Lifting and carrying are required during food prep, service, and storage tasks.
  • Frequent bending and stooping to access lower shelves, ovens, or refrigerators, and to prepare food or clean work areas.
  • Frequent use of hands, wrists, and arms for chopping, stirring, lifting, and using kitchen tools and equipment.
  • Ability to reach above the head for items stored on higher shelves and to utilize kitchen equipment such as overhead ventilation systems or shelving units.
  • Excellent hand-eye coordination and fine motor skills are needed for tasks such as knife work, plating, and food preparation.
