GENERAL PURPOSE OF JOB

The Restaurant Manager is a professional who has experience in the service industry that will supervise the kitchen and dining room operations & personnel. They will enhance and influence the overall guest experience, and F&B team, while maintaining compliance with the company practices, cost projections & our company mission.

 

ESSENTIAL DUTIES include the following. Other duties may be assigned.

 

  •  Oversees all aspects of The Lodge’s food and beverage planning & service
  •  Assists with creating menus that satisfy guests
  •  Oversees special menu and diet requirements of our guests
  •  Coordinates & works with F&B Management Team to attain desired food cost, menu standards, quality,   consistency & inventory
  •  Provide overall direction and standards for preparation & presentation of food & drinks
  •  Assist with event-specific menus for occasions, special events & corporate packages
  •  Directly involved with day-to-day function including staff management, guest interactions, office   administrative duties, vendor communications & labor cost control
  •  Oversee management of staff and address and/or assist with issues as needed. Create a positive   environment and support career growth plans for each staff member
  •  Ensure operational standards are met regarding sanitation codes & laws, food/beverage storage & loss   prevention
  •  Monitor purchasing of wine, beer, liquor and other beverages. Ensure the Lodge receives preferred pricing &   highest quality level of products
  •  Review, monitor and modify our inventory system as needed
  •  Food, Beverage & Bar research, development & monitoring of trends
  •  Directly involved with recruiting & hiring of staff
  •  Establish training procedures and standards. Ensure they are being adhered to consistently.
  •  Develop and uphold The Lodge’s philosophy as related to food & beverage
  •  Reports directly to General Manager and Woodloch Management Company
  •  Consult, meet, communicate regularly with the Executive Chef (Culinary leadership) and Dining room (FOH)   Leadership on a regular basis.
  •  Ensure communication between Blackmore Farm & Kitchen
  •  Actively involved with service during mealtimes both FOH & BOH, greeting guests, table touches and   overseeing meal service

RESPONSIBILITIES:

  •  Ability to work in a fast-paced environment
  •  Excellent communicator
  •  Ability to multitask & think quickly when under pressure
  •  Requires working long hours & at times erratic schedule including nights, weekends & holidays
  •  Some Physical exertion expected – on feet majority of day and moderate lifting
  •  Recognize exemplary behavior while also confronting and coaching behavior that is not up to our standards
  •  Ability to lead with positivity
  •  Process customer complaints patiently & in a timely manner
  •  Ability to work with FOH & BOH team to accommodate customer special dietary needs
  •  Exudes sincerity & caring approach with guests/customers
  •  Creates a professional work environment that promotes teamwork & takes pride in accomplishments

REQUIREMENTS

  •  Minimum of 8 Years of F&B Management Experience
  •  Minimum of 2-year hospitality/culinary degree
  •  Customer oriented mindset
  •  Critical thinker & problem solver
  •  Team player
  •  Good organizational & time management skills
  •  Ability to delegate tasks and communicate with all levels of staff
  •  Ability to create reports for GM & Ownership

LANGUAGE SKILLS:

Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence.

 

MATHEMATICAL SKILLS:

Ability to perform operations using units of American money and weight measurement, volume, and distance.

 

REASONING ABILITY:

Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.

It is also required that the employee be able to lift, turn, or exert force more than 30 pounds.
