ESSENTIAL DUTIES AND RESPONSIBILITIES include the following.  Other duties may be assigned. 

  1. Load 750 lb. trees into smokehouses and unload trees when cycle is completed.
  2. When unloading, weigh trees on scale and enter weight into computer.
  3. Always follow applicable HACCP procedures.  Monitor HACCP, CCP1B and maintain HACCP paperwork accurately.
  4. Know which procedure to use for each of the 6 houses being use.
  5. Check charts and touch screens at least hourly to make sure everything is operating correctly.
  6. Change wet sock and verify probes are in proper location prior to loading house.
  7. Assemble smokers at the beginning of the work week.  Disassemble smokers at the end of the work week.
  8. Clean and assemble brine chillers.
  9. Load trees into brine chill and unload when cycle is completed. 
  10. Always follow applicable HACCP procedures.
  11. Monitor smokehouse sensors to ensure proper temperature, humidity, and smoke level is always maintained.
  12. Keep smokers loaded with appropriate wood chips and monitor their operation.
  13. Keep brine chill loaded with proper amount of salt verified by salometer reading.
  14. Unload brine chill and place trees into hanging coolers.  Clean and dry rails in hanging cooler before moving trees.

Essential Functions Continued

  1. Thoroughly clean brine chill daily.
  2. Respond to smokehouse alarms quickly and resolve issue that led to the alarm.
  3. Maintain clean work area.  Empty ashes from smokers every 45-60 minutes.
  4. Thoroughly always clean each smokehouse at the end of each batch using a pressure washer following applicable Food Safety procedures
  5. If there is any concerns or issues let your supervisor know.

Required Knowledge, Skills and Abilities

  1. English required, bilingual in Spanish preferred.
  2. Ability to apply mathematical concepts to practical situations and perform necessary calculations for completing departmental paperwork.
  3. High School diploma, general education degree (GED) or equivalent work experience.
  4. Knowledge of smokehouse cycles and monitoring procedures.
  5. Ability to respond to smokehouse alarms and make necessary corrections.
  6. Ability to mix salt brine correctly.
  7. Able to organize hanging coolers correctly.
  8. Able to read and use touch screen computer to enter data.
  9. Ability to do quality work with little supervision.

Physical Requirements

  1. The employee must frequently lift and/or move up to 50 pounds, and sometimes push and/or pull up to 750 pounds.
  2. Employee must have adequate hand grip strength to be able to operate a pressure washer.
  3. Must be able to walk or stand for at least 95% of assigned shift.
  4. Must have necessary skills to operate computer touch screen and enter data.
  5. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus to recognize hazards to equipment and personnel, detect alarms, and read monitors for appropriate corrective action.
  6. Must have good manual dexterity to enable operator to properly use rail switches and smokehouse monitors.
  7. Must be able to work in a noisy environment.
  8. Must be able to turn in all directions to observe objects and employees.
  9. Must have a full range of motion in upper extremities to allow proper movement and handling of trees.
  10. Must be able to work in, and tolerate, a cold and wet environment.
