About the Department
Performs food service duties for the corrections facility, including preparation of food served for meals and snacks and maintaining a clean, healthy, and safe work environment.
Position Duties
- Reviews master menu and standardized recipes to determine type and quantity of food to be prepared; maintains established policies, procedures, standards, and practices in food preparation to achieve objectives for quality, nutritional meals and snacks; evaluates food preparation and recommends changes to improve operations; prepares special diets as directed.
- Plans work schedule for food preparation; assembles foods, supplies, and equipment for meal and snack preparation; sets up and prepares equipment to be used.
- Prepares and cooks meals and snacks; cuts and trims meat, fish, and poultry; spices and seasons as required by recipe; cooks, bakes, and so on with the appropriate utensil and/or equipment; carves, slices, or otherwise portions cooked foods to ensure optimum use of foodstuffs; observes and tastes food to determine aesthetic quality.
- Serves food portions on serving line; ensures that special diets receive appropriate food; suggests menu changes based on observations.
- Alerts supervisor to problems and needs concerning equipment and food supplies; detects and reports spoiled or unattractive food, defective supplies/equipment, or other unusual conditions; purchases foodstuffs, locally as needed; receives delivery, checks invoices, and stores food, equipment, and supplies.
- Carries out established policies, procedures, and objectives for a clean, healthy, and safe work environment.
Minimum Qualifications
- 6-12 months of job related cook/food service experience.
- Experience with food preparation for 25 or more people.
- Valid driver's license in the State of Iowa.

Other Qualifications
Exposure to burns and scalds from hot equipment and food, and to cuts from knives and utensils. There is some pressure to meet meal and snack schedules. Potential bodily harm when working with corrections residents.
