The Senior Manager, Operations Controller – Café, Catering & Bakery Operations is a strategic partner and operational thought leader supporting financial performance, cost control, and margin enhancement across Tatte’s café and bakery network. This role bridges Finance and Operations, providing real-time insights, tools, and analysis to drive disciplined decision-making and sustainable growth. You will be the point-person when it comes to ensuring operational leaders have the data / support to drive performance.
Key Responsibilities
Operational Finance & Planning
- Leverage deep knowledge of on-the-ground performance to support Ops leaders as they manage operating budgets, labor models, and P&L performance across cafés and bakery operations
- Co-own café and bakery-level financial planning and forecasting processes with FP+A and Ops; provide valuable alignment on volumes, labor, VTS, and controllables based on Ops partnership
- Lead periodic café/bakery performance reviews (weekly/monthly) to identify drivers of variance and margin pressure or upside
- Provide operators with insights and forecasting support to optimize planning for holiday weeks
- Partner with executive leadership, Finance, and HR to develop and roll out best-in-class compensation programs for leaders across the Ops organization
Cost Control & Margin Improvement
- Develop and maintain tools to track and improve labor efficiency, waste, COGS, and throughput
- Monitor product mix, pricing, and promotional impact on margins; work with Category and Culinary teams to model potential changes and share with Leadership
- Provide real-time, actionable financial guidance during new product launches or menu updates
Operational Reporting & Analytics
- Build café-level dashboards and scorecards to support decision-making by GMs, DMs, DECs, and Ops leadership
- Standardize reporting around labor cost, productivity, sales comps, and controllable expenses
- Support weekly flash reporting and monthly close with accurate insights and reconciliations
Cross-Functional Collaboration
- Partner with Accounting to ensure accurate coding during financial close
- Partner with Category Management on menu change impacts to the cafes and bakery
- Work closely with Culinary, Bakery, and Supply Chain to model product and ingredient costs
- Collaborate with Real Estate and Construction on pro forma models for new units
Leadership & Team Development
- Serve as a key financial advisor & coach to field leaders, building fluency in performance drivers
Qualifications
- 7+ years of experience in financial planning & analysis, operational finance, or business control—preferably in foodservice, retail, or hospitality
- Strong understanding of unit economics, labor models, and food cost management
- Track record of success supporting multi-unit operations and driving cost discipline
- Excellent financial modeling, Excel, data visualization skills, QuickSights and SQL experience a plus
- Familiarity with systems such as ERP, POS, labor scheduling, and inventory management platforms
- Highly collaborative, detail-oriented, comfortable working across multiple teams and projects
- Strong communication skills and ability to translate complex findings with cross-functional partners, some of whom will have limited financial knowledge
- Ability to work independently with little direct supervision
- Bachelor’s degree; MBA preferred but not required
