Overview

The Head Cook is responsible for food services, including meal planning and preparation, purchasing, and inventory.  The Head Cook provides nutritious meals and maintains a safe and healthy environment for agency clients.  Expectations regarding the quantity of work are outlined in the following categories.

Essential Functions, Duties, & Responsibilities

 Meal Preparation:

Responsible for the planning of menus for meals and snacks.  Prepares attractive and nutritious foods, as planned in menus, in a timely and organized manner.  Anticipates absences and schedule changes so as to minimize the necessity for other staff to participate in food preparation activities.  Maintains menu records as per regulation.  Reduces waste through portion control and the use of leftovers.   Prepares food for special occasions as requested.


 Purchasing:

Responsible for maintaining food supplies at the facility to prepare the weekly menu.   Estimates needs so as to minimize shopping trips and maximize large volume purchases.   Reduces costs through comparison shopping, negotiation with vendors, and wholesale/warehouse purchasing.   Purchases household items and cleaning supplies.  Responsible for managing food budget.


 Inventory: 

Responsible for maintaining an inventory of foodstuffs in storage.  Assures orderly storage areas.  Establishes a system of inventory control which allows for the recording of incoming and outgoing food supplies, maintains a base level of staples in stock, triggers purchasing decisions, and is auditable.  Using a similar system, maintains a supply of commonly needed household items and cleaning supplies.


Code Compliance:

Responsible for assuring that VOA food services comply with all state and local codes and regulations regarding health, nutrition, general practices, and safety.   Maintains cleanliness in food preparation and serving areas and of all food service equipment and utensils.   Responsible for bringing notices of violation and/or deficiencies to the attention of the Program Coordinator and for correcting such notices or deficiencies as directed.

 

Other Duties:

Responsible for instructing clients in food preparation and cleaning as needed to maintain facility standards. Comply with National School Lunch Program (NSLP) requirements and submit monthly meal counts documenting program use. Head Cook adheres to NAADAC code of ethics as well as the code of conduct for this agency.   Adherence to the federal regulations mandated by HIPAA and 42 CFR Part 2, and confidentiality requirements is required as outlined in agency policies and procedures. Performs other duties as assigned.  Expected to complete all assigned duties in accordance with timelines established by immediate supervisor. 

 

Knowledge, Skills and Abilities

  • Ability to perform duties and responsibilities described herein
  • High School Diploma or GED
  • Two years of experience in institutional meal preparation and purchasing OR Institutional Cooking Certificate (or its equivalent) and one year of experience
  • Alaska Driver’s License
  • Must be 21 years of age in accordance with the State of Alaska regulations for residential care centers
  • Ability to work flexible hours (including days, evenings, and some weekend hours)
  • Ability to travel if required (must have own transportation)

 

Conditions of Employment

  • Auto insurance coverage in accordance to agency requirements.
  • Must pass the State of Alaska Background check.
  • Alaska Driver’s License, must maintain a clean driving record in accordance with agency’s insurance company standards.
  • Must be punctual and reliable
  • Must have initial TB test and physical exam.
  • Must maintain a current food workers card
