Pay Range: $20/hour

POSITION SUMMARY INFORMATION: DUTIES AND REQUIREMENTS
Job Summary:
Has working familiarity with all job functions and duties of assigned kitchen staff. Coordinates the food preparation, serving and clean-up. Participates in the preparation and service of all food within a mobile or camp kitchen or facility.
Duties/Responsibilities:
- Assists the Food Services Manager with menu development, ensuring cost control measures are observed.
- Validates inventories, ensures deliveries are correct before accepting. Informs the Fire Pod Manager when substitute items are received before utilization.
- Maintains Manager’s/Operator’s Journals or other logs daily. Ensures staff is trained on completing appropriate journals.
- Ensures that kitchen staff maintain a high standard of cooking quality by knowing necessary lead times for meal preparation, appropriately timing meal service, adhering to applicable health standards and codes, and maintaining food properly.
- Supervises the serving of meals.
- Coordinates all portions of meals. Ensures that quantities are maintained according to contract.
- Oversees the operates mixers, ovens, choppers, shredders, steamers, grills, grinders, steam kettles, fry kettles, and other food equipment.
- Schedules necessary staff and ensures a continuous workflow. Orients staff to kitchen, appropriate procedures, and flow chart usage. Posts kitchen timesheets and assists staff in recording time.
- Ensures compliance with all Federal Contract Requirements pertaining to the Job Site.
- Assists Fire Pod Manager and Fire Pod Administrative Manager with paperwork as required.
- Conducts daily meetings with Fire Pod Manager and Fire Pod Administrative Manager.
- Ensures that Job Site/Mobilization is maintained in a clean and orderly fashion and that staff is appropriately supervised.
- Makes every effort to resolve issues by consulting with concerned parties, whether governmental agents or employees.
Required Education, Certifications, Licenses, and Experience:
- NM Manager Serve Safe certificate or ANSI accredited managerial food safety course
- 1-2 years experience working in a mobile kitchen or other fast paced food service environment.
Work Environment:
Employees may be exposed to extreme cold or hot weather conditions, fumes, or airborne particles, toxic or caustic chemicals, and loud noise.
Physical Requirements:
Employees may be required to remain in a stationary position, stand, push, pull, climb, kneel, crawl, balance, squat, bend, and reach. Employees may be also required to use gear to move items around, including, but not limited to, carts and dollies. Employees may also be occasionally required to lift and/or move up to 49 pounds.
