Unit Description:

Catawba Indian Nation Gaming Authority exercises INDIAN PREFERENCE

Native American Indian preference shall apply to this position pursuant to the Indian Self-Determination and Education Assistance Act (24 U.S.C. 450, et seq.), 25 CFR 271.44 and other relevant laws (Title 25, U.S. code, Section 472 & 473).

Responsibilities:
  • Lead and develop a multi-layered food and beverage team, including managers, chefs, mixologists, and frontline team members, while aligning departmental goals with overall casino objectives 
  • Ensure exceptional guest experiences across fine dining, casual dining, and bar operations by maintaining consistency, quality, and brand standards 
  • Drive profitability through menu engineering, pricing strategies, inventory control, and cost-saving initiatives across all venues 
  • Oversee compliance with health, safety, sanitation, licensing, and hospitality regulations, including gaming and alcohol laws 
  • Spearhead concept development, seasonal promotions, and beverage program enhancements, while collaborating cross-functionally to support broader property initiatives 
  • Lead training and performance standards, leveraging guest feedback and market trends to continuously evolve offerings and elevate the brand 
Qualifications:
  • Bachelor’s degree in hospitality management, business, or related field  
  • Minimum of 7 years of progressive food and beverage leadership experience in a high-volume resort or casino environment 
  • Ability to obtain and maintain a valid Catawba Gaming License and be at least 21 years of age 
  • Proficiency in food costing, recipe development software, POS systems, and Microsoft Office Suite with strong knowledge of food and beverage financials, cost control, labor optimization, and P&L management 
  • Proven experience managing large food and beverage teams, overseeing multiple outlets, and maintaining profitability in a competitive food and beverage landscape, in both fine dining and high-volume casual or quick-service operations 
  • Experience in casino, resort, or entertainment-based environments and experience working in or leading teams at Michelin-starred restaurants or James Beard Award-winning establishments 
  • Expert-level knowledge and technical skillset, including advanced beverage knowledge, mixology, wine list curation, vendor management, and global cuisine familiarity 
  • Deep knowledge of ServSafe, TIPS, or other safety and alcohol certifications a plus
