Job Summary
The Banquet and Sous Chef at Avalon Palm Springs plays a key leadership role in delivering high-quality culinary experiences across banquet events, private dining, and restaurant operations. This position supports the Executive Chef and kitchen leadership in managing daily kitchen operations, with a primary focus on executing banquet functions and assisting in a la carte service. The Banquet and Sous Chef upholds Proper Hospitality’s culinary standards while fostering a supportive and collaborative kitchen culture.

Essential Job Duties and Responsibilities

  • Lead the preparation, production, and execution of all banquet and event menus, ensuring consistency, flavor, and presentation meet Avalon’s brand standards
  • Support daily culinary operations, including line service, prep, and expediting, as needed during high-volume restaurant or poolside service
  • Supervise and train line cooks and prep staff, maintaining clear communication and high morale across shifts
  • Collaborate with the Events team to plan banquet timelines, staffing needs, and special menu requirements
  • Ensure mise en place and event orders are prepared accurately and efficiently for all scheduled functions
  • Monitor food quality and consistency across all culinary output, addressing issues in real time
  • Maintain cleanliness, organization, and sanitation of all kitchen workspaces according to local health codes and company standards
  • Assist with ordering, receiving, and inventory management of banquet-specific and general kitchen supplies
  • Support cost control initiatives, including waste reduction, portion control, and effective use of product
  • Serve as acting chef in the absence of the Executive Chef or Chef de Cuisine, ensuring continuity of operations and leadership
  • Demonstrate a positive, professional demeanor while mentoring junior kitchen staff and supporting cross-functional teamwork with FOH departments

Required Qualifications and Experience

  • Minimum 3 years of progressive culinary experience in a hotel, banquet, or high-volume restaurant setting
  • Experience executing plated and buffet-style banquet functions with attention to timing and presentation
  • Demonstrated leadership experience in supervising kitchen staff and managing shift operations
  • Culinary degree or equivalent professional training preferred
  • Strong knowledge of food safety protocols and kitchen operations; ServSafe certification required
  • Ability to work flexible schedules including nights, weekends, and holidays, based on business needs

Physical Demands

  • Standing and walking for extended periods, often in hot or fast-paced environments
  • Lifting and carrying up to 50 lbs frequently
  • Ability to bend, reach, and perform repetitive motions such as chopping, mixing, and plating
  • Exposure to heat, steam, and commercial kitchen equipment
