Role: The Vice President, Food and Beverage has primary responsibility for administering all aspects of the food and beverage operations by developing and executing strategic plans necessary for short and long-term growth and profitability; uses analytics to measure performance of the department; ensures compliance with established policies and procedures. Provides strategic leadership to F&B operations by supporting Company initiatives. Performs job responsibilities in exemplary manner and according to department standards.  Adheres to all Company, Safety and Department policies and procedures.  Fosters teamwork and ensures that the team provides excellent guest service, anticipates guest needs, striving to exceed guest expectations.   Builds brand loyalty by living the JW Marriott Core Values.


SKILLS/QUALIFICATIONS

  • Must be 21 years of age
  • Bachelor’s Degree required. Masters in Hospitality, Business Administration (or equivalent) preferred.
  • A minimum of ten years of full service, upscale resort, or hotel experience in a high-level leadership position.
  • Expert knowledge of hotel operations including foods, beverages, supervisory aspects, service techniques, guest interaction, vendor relations, budgeting, contractual relations and legal compliance.
  • Excellent communication skills required, both verbally and in writing, to provide clear direction to the management and service teams.
  • Ability to work under pressure and deal with stressful situations as demands require.

 

REQUIRED CERTIFICATE/LICENSE: 

  • Valid Clark County Health Card
  • Valid Las Vegas Alcohol Awareness Card
  • Valid Non-Gaming Card
  • Valid Gaming Registration
  • Valid ServSafe Manager Certification

 

MAJOR JOB DUTIES:  Duties include, but are not limited, to the following:

  • Ensure that the department maintains the highest standards of food and beverage quality, guest service, cost control and consistency in accordance with the Company’s expectations.
  • Develop a department vision and strategy that is aligned with the overall business goals and that improves the position of the property in comparison to the competitive set.
  • Responsible for developing new outlet concepts and refreshing existing outlet operations in conjunction with the Company’s strategic goals. 
  • Ensure that all purchasing efforts are streamlined and follow the Company requirements; ensure that quotes are always received and reviewed accordingly and that we constantly strive to ensure that the Company receives the best pricing for all food and beverage items.
  • Constantly work on promoting the resort creatively in conjunction with the marketing team and in accordance with the resort operations schedule and events calendar.
  • Responsible for managing the critical path process during openings and ensuring all new food and beverage initiatives are successful per the Company standards.
  • Ensure operating standards and policies and procedures are followed by the food and beverage management team.
  • Measure and improve performance using analytics as related to all aspects of department operations, ensuring that the team makes necessary changes and achieves desired results.
  • Consistently monitor department sales reports, labor reports, and the P&L.
  • Work closely with the Finance department in the development of the budget. Monitor the P&L and ensure variances are explained in commentary on at least a monthly basis.
  • In partnership with Finance, conduct timely analysis of food and beverage prices in relation to competition.
  • Maintain and further develop a strong network of contacts and assess potential for F&B collaboration for new and existing amenities.
  • Craft and present F&B vision to executive leadership team and ownership.  Attract potential partners.
  • Provide F&B operations support across the resort.

Work is performed in a hotel casino property.   Must be tolerant to varying conditions of noise level, temperature, illumination and air quality. Must be able to work in an indoor environment.  The noise level in the work environment is usually moderate.  When near the casino floor, the noise level may be increased to loud.  A casino environment typically allows smoking.

  • Ability to verbally communicate effectively with guests, associates, vendors, and others. 
  • Requires prolonged standing and mobility.  
  • Requires bending and reaching. 
  • Requires transporting, pushing, pulling, and maneuvering items weighing up to 100 lbs.
  • Requires lifting items weighing up to 40 lbs.
  • Requires eye/hand coordination.  
  • Requires use of standard office equipment, including Micros System  
  • Requires basic math and accounting.  
  • Requires the ability to distinguish letters, numbers and symbols.   
  • Ability to comply with policies, procedures, job description, chemical labels (SDS) and other instructions.
