Job Summary:

Our Lead Banquet Cook has both a passion for the culinary arts, and the talent to lead a successful team.  They are energized by the fast paced bustle in the kitchen, supporting their team and ensure the kitchen runs with smooth efficiency.  Good under pressure, and always willing to fulfill special requests by the guest with a can-do attitude.

Duties & Functions:

  • Assists Culinary Management for the overall success of the daily kitchen operations.
  • Use your culinary expertise to lead the production, preparation and presentation of food for an exceptional guest experience.
  • Ensure all dishes are prepared and presented in accordance with Banquet Event Order, appropriate recipes and presentations.
  • Acknowledge any special requests from Banquet Guests and prepare the menu item accordingly.
  • Work banquet food station as scheduled by the Chef or Kitchen Supervisor.
  • Leads shifts while personally preparing food items and executing requests based on required specifications.
  • Ensure effective co-operation between outlets and the kitchen.
  • Ensures personal and staff compliance with food handling, sanitation standards, performance levels, and teamwork communicated in the Cook Job Descriptions.
  • Able to perform all duties and functions of the Cook Job Description including but not limited to the following:
    • Prepare cold food, including preparing salads, cold sandwiches, condiments, and dressings.
    • Operate ovens, stoves, grills, microwaves, and fryers to prepare foods.
    • Be fully knowledgeable in all menu items and features including their garnish, contents and preparation methods. Answer questions from servers or guests as needed.
    • Be knowledgeable in all cooking methods including poaching, braising, roasting, charbroiling, sautéing, grilling, frying, and baking.
    • Ensures all food is prepared, cooked and presented in accordance with appropriate recipes, presentations and with guest orders.
    • Know common food allergens and their substitutes.
    • Acknowledge any special requests and prepare the menu items accordingly.
    • Manage guest orders in a friendly, timely and efficient manner.
    • Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
    • Disassemble and assemble kitchen equipment following safety procedures when cleaning.
    • Wash and disinfect kitchen area including tables, tools, knives, and equipment to ensure sanitary conditions and meet the departmental standards, including using sanitizers required by health department.
    • Recognize and follow quality standards for meats, vegetables, fruits, dairy products and grains, including proper storage of these items. Effective utilization of leftovers and control of waste.
    • Ensure compliance with food safety and handling policies and procedures i.e., use dates, temperature of appliances and food.
    • Adherence to all safety protocols including handling and transportation of foods and knife work.
    • Practice correct food handling and food storage procedures according to federal, state, local and company regulations.
    • Check and ensure the correctness of the temperature of appliances, food using thermostats and thermometers, including monitoring freezer systems, such as fans, drains, and doors, for proper operation, and report issues or problems to facility management.
  • Interacts with guests to obtain feedback on product quality and service levels.
  • Display a positive, hands on leadership style to attract, retain and motivate the associates
  • Train and support Cooks.
  • Help resolve problems and provide open communications to ensure an excellent work environment.
  • Ensures recognition is taking place across areas of responsibility.

 

Desired Qualifications:

  • 2 years Culinary experience 
  • Previous Culinary Supervisory experience a plus. 

Desired:  2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, or Business Administration
