JOB OVERVIEW
As a Pastry Chef in our fine dining restaurant, you will be responsible for producing exquisite pastries and desserts, ensuring top-tier quality for our restaurant’s guests while also managing production for third-party vendors. You will work closely with the Executive Chef to maintain our restaurant's high standards of excellence in both flavor and presentation. This position requires an individual with strong culinary knowledge, excellent organizational skills, and the ability to handle both in-house orders and external contracts with precision.
ESSENTIAL JOB FUNCTIONS
- Prepare a variety of pastries, desserts, breads, and confections from scratch, ensuring consistency, creativity, and the highest standards of quality
- Develop and innovate seasonal dessert menus, incorporating unique flavors and modern presentation techniques
- Plate and present desserts in a visually appealing manner, ensuring that each dessert aligns with the restaurant’s aesthetic standard
- Maintain a clean and organized pastry station, adhering to all health and safety regulations
- Oversee and produce pastry orders for third-party vendors, including high-end bakeries, events, and corporate clients
- Communicate effectively with vendors to understand their specific needs and ensure timely delivery of orders
- Manage inventory for production of third-party orders, ensuring efficient use of resources and minimizing waste
- Ensure that all vendor orders meet the restaurant's high-quality standards and are produced and packaged appropriately for transport
- Collaborate with the kitchen team to ensure all pastry orders for the restaurant, including à la carte desserts and specials, are fulfilled to the highest standard
- Supervise and mentor junior pastry team members, fostering an environment of growth and learning
- Assist in the training and development of new pastry staff, ensuring they understand and uphold the restaurant's standards
- Manage inventory levels of pastry ingredients, ensuring fresh products are available for both in-house and third-party production
- Order and source ingredients, working within budget constraints while maintaining the quality and standards expected by the restaurant
- Maintain consistency in taste, texture, and presentation across all desserts and pastries
- Continuously evaluate the quality of ingredients and finished products, making adjustments where necessary
- Stay up-to-date with industry trends and incorporate innovative ideas into menu development.
- Ensure that all equipment, tools, and the pastry kitchen are kept in pristine condition
- Follow all sanitation guidelines, keeping work areas clean and organized, and ensuring health and safety standards are met at all times

Requirements
ESSENTIAL QUALIFICATIONS
- Proven experience as a Pastry Chef, preferably in a fine dining or upscale restaurant environment
- Extensive knowledge of pastry techniques, including classic French techniques, as well as modern dessert trends
- Strong attention to detail and a passion for high-quality presentation
- Experience in managing production for third-party vendors, including fulfilling large orders and maintaining high standards
- Strong organizational skills with the ability to multitask and meet deadlines in a fast-paced environment
- Ability to work collaboratively with the kitchen team and effectively lead and mentor pastry staff
- Excellent communication skills to liaise with both internal team members and external vendors
- Culinary degree or relevant pastry certification preferred but not required
