The Operations Manager – Food & Beverage (F&B) oversees the daily operation and performance of all food and beverage outlets, including the restaurant, bar, and complimentary breakfast service. This position ensures exceptional guest experiences, high-quality food and beverage standards, and efficient operational practices while maintaining budget control, staff development, and compliance with all safety, security, and regulatory standards.
The F&B Operations Manager works closely with the General Manager, Kitchen and Bar Leads, and other department heads to ensure smooth service delivery, operational excellence, and consistent brand standards.

Key Responsibilities:
Restaurant & Bar Operations:
- Oversee daily operations of the restaurant and bar to ensure consistency in food quality, service, and presentation.
- Lead by example with a hands-on approach during service periods, supporting both front-of-house and back-of-house teams.
- Maintain menu standards and collaborate with culinary leadership on menu updates, costing, and seasonal promotions.
- Ensure all opening, closing, and cash-handling procedures are followed accurately.
- Maintain beverage program quality, including inventory, ordering, and supplier relationships.
Breakfast Service Oversight:
- Manage the daily complimentary breakfast operation, ensuring quality, cleanliness, and food safety compliance.
- Oversee ordering, inventory, and labor scheduling to maintain efficiency and minimize waste.
Team Leadership & Development:
- Recruit, train, and coach F&B team members to uphold service standards and maintain a positive work environment.
- Create and manage F&B schedules in line with labor budgets and business demand.
- Conduct performance evaluations, coaching sessions, and progressive discipline as necessary.
Financial Management:
- Manage department budgets, control labor and operating costs, and monitor key performance metrics (food cost %, beverage cost %, labor %).
- Review and approve vendor invoices and ensure timely payment submissions.
- Identify and implement strategies to drive revenue and improve profitability.
Guest Experience & Service Quality:
- Ensure a consistent, high-quality guest experience across all F&B outlets.
- Handle guest feedback and service recovery promptly and professionally.
- Collaborate with the Front Office and Marketing teams on promotions, special events, and group activities.
Safety, Security & Compliance:
- Ensure compliance with all local, state, and federal health, safety, and food service regulations.
- Oversee staff training on ServSafe, alcohol service laws, workplace safety, and emergency response.
- Maintain accurate documentation for inspections, licenses, permits, and safety certifications.
- Enforce OSHA standards and hotel safety policies, including proper handling and storage of chemicals.
- Work closely with management and maintenance teams to ensure guest and employee safety across all F&B areas.
- Support the hotel’s overall safety and security initiatives, including participation in emergency preparedness drills and reporting any security concerns immediately.
Collaboration & Communication:
- Report directly to the General Manager and collaborate with:
- Operations Managers
- Kitchen Team / Executive Chef
- Maintenance Manager
- Housekeeping Supervisor
- Participate in weekly leadership meetings and contribute to hotel-wide operational strategies.
Administrative & Financial Duties:
- Review and process vendor invoices for timely submission and payment.
- Monitor department budgets and maintain cost controls across labor, supplies, and food service.
- Ensure compliance with hotel safety policies, brand standards, and guest service protocols.
Guest Relations & Reputation Management:
- Personally attend to guest needs, special requests, and service recovery situations.
- Monitor and respond to online guest reviews and comments with professionalism and consistency, with final approval from the General Manager.
Safety, Security & Regulatory Compliance:
- Ensure full compliance with all federal, state, and local safety and security regulations, including OSHA standards and hotel brand requirements.
- Maintain proper protocols for the handling, usage, and disposal of chemicals, including access to and understanding of Material Safety Data Sheets (MSDS).
- Ensure the safe storage of cleaning agents and compliance with all hazard communication policies.
- Oversee staff training on bloodborne pathogens, personal protective equipment (PPE), and emergency procedures to maintain a safe working environment.
- Support and enforce hotel-wide initiatives related to employee health, guest safety, and regulatory compliance.
Interdepartmental Collaboration:
- Reports directly to the General Manager.
- Works closely and collaboratively with:
- Engineering Manager
- Operation Manager
- Housekeeping Supervisor
Qualifications:
- 3–5 years of Food & Beverage management experience in a hotel or full-service restaurant environment.
- Proven ability to lead and motivate teams while maintaining high service standards.
- Strong understanding of restaurant/bar operations, budgeting, and cost control.
- Excellent organizational, interpersonal, and communication skills.
- Knowledge of safety standards, OSHA regulations, and food/alcohol service compliance.
- Proficient in POS systems, inventory management software, and Microsoft Office Suite.
- Ability to work flexible hours, including weekends, holidays, and evenings as needed.
