Major/Essential Functions
- Assist Unit Manger in meat lab working with faculty and staff to meet the needs of internal and external stakeholders.
- Slaughter beef, pork, and lamb according to meat industry standards so that research data is valid. Procedure includes weighing, stunning, sticking, skinning, head removal and splitting of the carcasses.
- Assist Unit Manger in Developing student workers to be industry prepared to work in or with a USDA Inspected meat facility
- Comply with USDA Inspector in keeping facility clean, maintaining appropriate labels and ingredients for USDA approval. Records must be accurate and kept on a timely schedule.
- Duties include fabricating of carcasses or cuts and/ or packaging as retail cuts for sale. Assist with meat sales through Raider Red Meats and outside companies.
- Participate and/ or teach meat industry/ youth short courses host by Animal & Food Science department.
- Assist Unit Manger with implementation HACCP plan in accordance with USDA regulations.
- Processing of meat products used for teaching and research ad converting them into retail products for sale
- Supervise 5-20 student assistants daily and production unit when unit manager is away

Preferred Qualifications
- Knowledge of animal welfare, harvest/ carcass fabrication, and understanding of HACCP guidelines. Must be able to multi task and handle numerous changes in schedules. Must be a effective communicator. Must be able to oversee and communicate with 5-20 student assistants and new staff.
- Past Leadership and work with students and/or the meat industry
- Prior experience in red meat sales and production/ manufacturing of foods and/ or prior experience in meat and animal production
