Job Summary:
Under moderate supervision the Cook I is responsible for preparation of food to be served complying with all applicable sanitation, health, and personal hygiene standards and following established food production programs and procedures in accordance with protocol guidelines. Responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.
Essential Responsibilities and Duties:
- Prepares or directs preparation of food served using established production procedures and systems.
- Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
- Monitors food supplies to avoid shortages and ensure that fresh ingredients are used.
- Reports necessary equipment repair and maintenance to supervisor.
- Correctly prepares all food served following standard recipes, special diet orders, and individual protocol requirements.
- Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved.
- Maintains daily records of items in need of ordering and give to supervisor.
- Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
- Ensures that all food deliveries are complete as ordered/inventoried;
- Available to facilitate deliveries and repairs/maintenance as needed.
- Communicates needs to and with nursing staff and Patient Care Technicians.
- Maintains all kitchen records (health department, grease trap cleanings, etc.).
- Completes food temperature checks before service.
- Cooperates and works together with all co-workers.
- Plans and completes job duties with minimal supervisory direction.
- Supports and ensures strictest adherence to best practices, FDA Code of Federal Regulations, ICH (International Conference on Harmonization), GCP (Good Clinical Practices), CenExel standard operating procedures, site working Practices, protocol, and company guidelines and policies.

Education/Experience/Skills:
- Must be able to effectively communicate verbally and in writing.
- A high school diploma or GED is required. Must be 18 years of age.
- Certification in food safety or food handling (e.g., ServSafe) may be required.
- Prior supervisory experience in food service industry required.
- Knowledge of clients rights and ensures an atmosphere which allows for the privacy, dignity and well-being of all clients in a safe, secure environment.
- Knowledge of kitchen equipment, i.e., oven, stove, dishwasher, slicer, coffee machine, steamer, mixer, etc.
- Knowledge of established sanitation standards, food preparation and handling techniques.
- Ability to follow written and oral instructions and procedures.
- Ability to work in a team environment or individually.
- Ability to interpret, adapt, and apply guidelines and procedures.
Working Conditions
- Indoor, Clinic environment.
- Essential physical requirements include sitting, typing, standing, walking.
- Lightly active position, occasional lifting of up to 20 pounds.
- Reporting to work, as scheduled, is essential.
- On site work arrangement.
