Job Purpose
Wilma’s, a home to boisterous games and dangerously good times, is looking to hire a Restaurant General Manager. The restaurant features a full-service bar and dining room as well as Wilmington’s first duckpin bowling alley. We are seeking an experienced, results-driven Restaurant General Manager to lead daily operations, drive sales and profitability, ensure an exceptional guest experience, and build a high-performing team. The GM will be the on-site leader responsible for operational excellence, financial performance, staff development, and brand standards.
Duties & Responsibilities
- Lead daily front- and back-of-house operations to ensure smooth service and consistent quality.
- Hire, train, coach, schedule, and retain staff; foster a positive, service-oriented team culture.
- Drive revenue growth through upselling, promotions, events, and local partnerships.
- Manage payroll, labor scheduling, and control labor costs while maintaining service levels.
- Oversee inventory, food and beverage cost control, purchasing, and supplier relationships.
- Monitor financial reports and implement corrective actions to meet targets.
- Ensure compliance with health, safety, licensing, and sanitation regulations.
- Maintain high standards for guest service; handle escalated guest issues promptly and professionally.
- Implement and maintain brand standards, operational procedures, and training programs.
- Coordinate with ownership on budgets and strategic initiatives.
- Oversee the proper execution of the food and cocktail menus.
- Maintain a professional restaurant image, including restaurant cleanliness, proper staff uniforms, and appearance standards.
Qualifications
- A combination of practical experience and education a plus.
- Proven track record of driving sales and managing P&L.
- Knowledge of POS systems, inventory management, scheduling platforms, and basic accounting principles.
- DABC certification
- ServSafe certification

- Strong leadership and team-building skills; able to recruit, train, and develop staff.
- Excellent communication, problem-solving, and customer-service skills.
- Strong attention to detail and ambiance.
- Positive attitude to maintain an enjoyable work environment.
Experience
- Strong background with craft beers, craft cocktails, spirits and wine.
- Marketing experience for restaurants, social media, events.
- Minimum of three years’ General Management experience is required.
Physical Requirements
- Requires constant standing and walking.
- Ability to work 10-to-12-hour shifts (nights, weekends, and holidays).
- Frequent stretching and/or bending to access products.
- Frequent lifting, carrying, pushing, and/or pulling of objects weighing up to 165 lbs (Kegs).
