Job Summary

The Smokehouse Operator is responsible for verifying smokehouse functions and will be working closely with the Quality Lab.  Essential functions include but not limited to the following:

• Perform smokehouse verifications.
• Working in QA lab testing meat sticks.
• Validate weights of meat sticks at different increments of the cook cycle.  
• Perform Smokehouse Calibration (when necessary).
• Work and communicate efficiently with team members in the department.
• Perform laboratory tasks, as assigned and assist in unloading smokehouses.
• Perform and analyze results of moisture and fat content from analyzer. 
• Work closely with both the Raw and RTE operations teams on incoming and outgoing meat stick weight, length, etc.
• Be the Subject Matter Expert (SME) on the in-line scales and the monitoring system for the scales.
• Report to management teams on findings, adjustments and needs of smokehouse operations.
• Complete Hanson Tech and Mauting recommended operating procedures and PM list at designated intervals.
• Assist in other departments or tasks, as assigned.
