Major Tasks, Duties, and Responsibilities:

  • Help supervise all aspects of the Food Service department. Pricing, purchasing of special food items, equipment needs, tray line preparation and maintenance, etc.
  • Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner.
  • Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation
  • Supervise, train, and coach kitchen and cafeteria staff.
  • Interview patients to obtain nutritional information regarding food habits and preferences for guidance in planning diets. Performs meal rounds and observes plate waste to evaluate acceptance and tolerance of food.
  • Reviews patient medical records and completes nutritional assessment on inpatients with exception of uncomplicated OB patients and puts nutrition note to confirm diet order, review nutritional status, and include plan of care as necessary.
  • Performs a complete nutritional assessment on all SNF patients within 48 hours of admission.
  • Instructs patients and/or family on diets as ordered by physician. Helps maintain nutrition education materials for patients on therapeutic diets.
  • Distributes food/drug interaction sheets on Coumadin and performs patient education of potential interactions as necessary.
  • Writes general and modified diets according to nutritional standards and the simplified diet manual.
  • Assists with dietary component of cardiac and pulmonary rehabilitation program and Cancer Center.
  • Assists nutrition director in gathering inpatient information based on nutritional risk for QI reports
  • Assists with management duties in Nutrition department in absence of Director including scheduling of consults and monitoring of tray lines for accuracy.
  • Assists with modified diet in-service education for dietary employees as needed.


        Skills, Education and Experience:

        • Registration from the Academy of Nutrition and Dietetics
        • Dietetic licensure in the State of Iowa
        • Knowledge of medical terminology


        Analytical Ability/Problem Solving/Concentration:

        • Ability to communicate effectively with staff at all levels
        • Ability to take initiative to see that tasks are performed well and within time demands
        • Ability to think logically in following procedures and instructions
