SMOKEHOUSE OPERATOR
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Primarily responsible for the operations of the Smokehouse by doing the following:

- Understand bacon specification requirements to insure quality.
- Follow procedures outlined by Department Supervisor/Department Leads.
- Follow Daily’s attendance and punctuality rules.
- Follow all Daily’s food security guidelines.
- Follow all Daily’s Safety guidelines as outlined in the Safety Handbook.
Assist Department Supervisor and Team Members in meeting production and quality requirements by doing the following. (Additional duties may be assigned.)
- Responsible for training new hires on all shifts. Must be willing to work the new hires shift.
- Must be able to provide relief on alternative shifts when needed.
- Ensure production accuracy to fulfill customer needs.
- Making sure room is stocked with needed supplies.
- Maintain line efficiency.
- Responsible for all downtime on assigned lines.
- Responsible for all safe operation of machine including set up and tear down.
- Change settings and recipes.
- Ensure proper insertion of bellies for optimal performance.
- Set up of machines.
- Perform general PM’s.
- LOTO, machine settings and controls.
- Maintain accurate counts.
- Adhere to product specifications.
- Work at a pace consistent with the required line speed.
- Keeping accurate records as needed.
- Strict compliance with sanitation requirements.
- Minimize scrap at all times.
Maintain proper department and plant appearance by:
- Sweeping floor and aisles as instructed.
- Keep all scraps picked up from floor in your work area.
- Keeping all trash and items picked up.
QUALIFICATION REQUIREMENT: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the work environment, knowledge, skill, and/or ability required or preferred. EDUCATION and/or EXPERIENCE: High school diploma or general education degree (GED) preferred; or one to three months related experience and/or training; or equivalent combination of education and experience preferred.
LANGUAGE SKILLS: Ability to read and comprehend simple instructions, short correspondence, and memos preferred. Ability to write simple correspondence preferred. Ability to establish and maintain effective working relationships with peers and management. Bilingual skills preferred.
MATHEMATICAL SKILLS: Ability to apply mathematical concepts to practical situations preferred.
REASONING ABILITY: Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form preferred.
PHYSICAL DEMANDS: The employee must regularly lift and/or move up to 50 pounds, occasionally lift up to 75 pounds and sometimes push/and or move up to 300 pounds. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.
WORK ENVIRONMENT: While performing the duties of this job, the employee occasionally works near moving mechanical parts and is occasionally exposed to cold, wet and/or humid conditions.
The noise level in the work environment is usually moderate but sometimes very loud.
NORMAL WORK SCHEDULE: The hours and days of work are established by departmental needs and at the discretion of management.
