Essential Duties & Responsibilities:
● Supervise daily kitchen operations and meal preparation for inmates and staff.
● Assign, train, and oversee all kitchen workers, ensuring compliance with safety and sanitation
rules.
● Monitor food inventory, storage, and supply orders to minimize waste and ensure adequate
stock.
● Maintain accurate records of food production, temperatures, cleaning schedules, and inmate
labor logs.
● Enforce security protocols to prevent misuse of kitchen tools, food supplies, and ensure
controlled movement.
● Conduct regular inspections for cleanliness, equipment maintenance, and compliance with
health codes.
● Collaborate with facility staff to ensure dietary requirements, including religious or medical
needs, are met.
● Provide feedback and discipline in accordance with facility rules and rehabilitative guidelines.
Required Knowledge Skills/Abilities:

● Proficient with Microsoft Office Suite or related software.
● Working knowledge of bookkeeping practices and business English with good grammatical and
spelling, skills, and ability to develop correspondence, reports and operational directives.
Education and Experience:
● High school diploma or GED required; culinary or food service certification preferred.
● Minimum 2 years of food service or kitchen supervisory experience; correctional setting
experience a plus.
● HAACP certification preferred.
● Strong knowledge of food safety standards (e.g., ServSafe Certification).
● Ability to lead and instruct individuals from diverse backgrounds.
● Excellent communication, organizational, and conflict resolution skills.
● Must pass a background check and meet all facility security clearance requirements.
