In this role, you will be responsible for assisting the Culinary Director in planning and managing all aspects of food preparation in all Desert Mountain Club outlets including Catering and Banquet. Direct the seasonal menu changes and development, mentoring of outlet chefs, and product consistency of all restaurants. Ensure the diversity of concepts throughout the property both from menu offerings and price points. Execute the culinary strategy to meet business needs and maximize profits..
The ideal candidate will be a highly driven and detail-oriented culinary professional with over 12 years of experience, including five years in culinary leadership roles at Five-Star hotels or fine dining establishments. Known for taking initiative, leading by example, and delivering excellence in both culinary execution and team development. Brings a strong background in training, operations, and high-end service, with international and luxury resort or private club experience preferred. Adept at managing multiple priorities with a calm, focused presence and a strong sense of urgency. Skilled in communication, problem-solving, financial management, and the use of industry software, including Microsoft Office, inventory, payroll, and order systems. Possesses a valid driver’s license and maintains an impeccable, professional appearance at all times.

JOB DETAILS
Responsibilities:
- Support the Culinary Director in overseeing kitchen staff, including Chefs, Sous Chefs, and other culinary personnel, with responsibilities encompassing hiring, performance evaluations, training, career development, and disciplinary actions.
- Foster and promote a cooperative working climate, maximizing productivity and employee morale.
- Directly supervise Chef de Cuisines, Sous Chefs, Jr Sous Chefs, Cooks, Bakers, Pastry Chefs, Externs, and Apprentices with a staff of about 150 teammates; also supervise Stewarding teammates as needed.
- Participate in developing the vision of food and concept trends consistent with company objectives and initiatives.
- Oversee the execution of events with the assistance of the banquets and catering team.
- Assist in developing short and long-range plans to meet business needs and maximize profits.
- Attend BEO meetings to communicate appropriate information to the culinary and stewarding team.
- Ensure that kitchens provide nutritious, safe, appealing, and properly flavored food.
- Work closely with the Dir. of Culinary on menu development, portion control, and cost.
- Establish and implement quality standards in cooking methods, presentation techniques, portion control, and retention of nutrients.
- Maintain cleanliness, maintenance of equipment, and a safe working environment following DMC and Arizona Health Department policies.
- Assist the Director of Culinary in developing and managing the budget.
- Ensure a safe and sanitary work environment for all teammates.
- Identify situations which compromise the department’s standards and rectify these immediately.
- Interact with Members to solicit feedback and ensure satisfaction.
- Create and develop recipes and plan and price menu items.
- Minimize waste and maintain controls to attain forecasted food and labor costs.
- Research local products, new suppliers, and special markets.
- Interact with product vendors to ensure that the hotel receives the best product at the best price in all business dealings.
- Provide culinary instruction and demonstrate culinary techniques to kitchen staff.
- Other duties as assigned by the Director of Culinary.
