Description/History

The ProStart program provides a platform for students interested in the Hospitality industry to push their boundaries to the next level. Students gain industry-relevant skills that help them develop their critical thinking, teamwork, menu design, menu writing, menu costing, food photography, and time management. Moreover, it can be instrumental in developing problem-solving techniques that are replicated in the Hospitality industry. Students have attended and competed at the State ProStart competition at the St. Paul River Center in the 2023, 2024, and 2025 school years. Students in the program need to hold practice outside of the designated class time, with practices taking 2-3 hours either before or after school hours, to be competitive with other schools.

 

The time that is needed outside of the classroom focuses on connecting with chef mentors, organizing fundraising dinners to be hosted at a local restaurant, and practice time for the team. These students will have the opportunity to create and execute the team's menu alongside professionals in a local restaurant.

 

September through March to prepare to go to the State competition in St. Paul.

March through May to prepare for Nationals if the team wins 1st place at State.

 

Time outside contract hours for the program:

4 hours per week for recipe development and testing in the fall

1 hour per week for mentor chef meeting to discuss holes in students' menu proposal in the fall

11 hours per week in winter with practice and a fundraising dinner

9 hours per week in the spring with team practice.
