We are seeking a Director of Beverage to lead the strategy, curation, development, and execution of TRC’s beverage programs across our collection.
POSITION SUMMARY
The Director of Beverage will play a critical role in the implantation of standardized wine, liquor, beer, and non-alcoholic initiatives and procedures. This position will also develop strategic partnerships with beverage suppliers and distributors to achieve a high level of quality and prestige.
ESSENTIAL FUNCTIONS
Essential Functions Statement(s)
- Manage Wine Operation Support & Training activities, including the achievement of standardized processes and procedures
- Ensure adequate inventories of all products by working closely with the TRC Beverage coordinator
- Establish and measure performance metrics for success
- Drive efficiencies and improvements in the restaurant beverage functions
- Partner with the Area Directors to define and execute initiatives in a timely and organized manner.
- Establish proactive internal communications on wine operating priorities, able to identify and navigate internally in order to engage appropriate resources to implement internal projects
- Strengthen national wine, liquor, and beer partnerships
- Assist in the creation/execution of exclusive private label wines
- Define ways to further leverage the purchases of all beverages working with purchasing
- Wine menu engineering through seasonal menu review and inventory/purchase reporting
- Manage and analyze depletion reporting and marketing support
- Create LTOs and engage in creative marketing of all beverages
- Enhance beverage training through senior sommeliers and valued partners
- Work closely with the senior-level sommeliers to create balanced, fiscally effective, and forward-thought wine lists
- Partner Training for shared learning and improved operational efficiencies
- Drive growth of beverages sales while bettering margins
- Provide administrative support for National Upscale Contracts and Agreements, including timely review of terms, providing recommendations/revisions to terms based on business needs, facilitating approval process, and maintaining an electronic archive and timeline of natural terms of agreements

Requirements
SKILLS & ABILITIES
- 5+ years of experience in hospitality beverage leadership within multi-unit, multi-concept, or upscale dining environments.
- Deep knowledge of wine, spirits, beer, coffee, and zero-proof trends, service standards, and sourcing.
- Strong capability in vendor negotiation, purchasing strategy, and inventory analytics.
- Proven ability to lead and influence cross-functional teams.
- Experience developing and delivering beverage education programs.
- Court of Master Sommeliers or WSET certification preferred but not required.
- Bachelor’s degree preferred.
