Description

The Sous Chef is responsible for the smooth and efficient operation of all outlets during shift. The Sous Chef will help assist in menu preparation, recipe making, and yield tests. Ensure stocking and sanitation of department.


DUTIES AND RESPONSIBILITIES:

  1. When arriving at work allow yourself ample time to do a thorough walk-through inspection of the kitchen. Use this time to discuss any concerns found by the Senior Chef.
  2. Check all products and par levels. Make a requisition list of any items needed (be thorough and complete, there is no excuse for running out of items on hand).
  3. Ensure all your cooks are aware of their projects and products.
  4. Be accessible to our team members. You are their go to person for concerns and issues.
  5. Ensure all products produced are high quality. Inspect all products produced on your shift before they are stored.
  6. Ability to work any and all stations.
  7. Ensure all cooks are following set recipes and menus.
  8. Report any waste on your shift; keep to a minimum.
  9. Responsible for smooth operation of all back of house culinary areas during shift.
  10. Ensure all walk-ins and coolers in responsible area are cleaned and in good order.
  11. Ensure all orders are put away before your leave. Ensure all product used is of good quality and finish. Ensure product rotation.
  12. Responsible for food and labor costs on your shift.
  13. Be aware of what is happening on property – events, hours of operation, etc.
  14. All other duties as assigned.

Qualifications


QUALIFICATIONS AND REQUIREMENTS:

  1. High school diploma or equivalent.
  2. Three (3) years’ hands-on operational experience in food running a restaurant, casino preferred.
  3. Have the ability to requisition food while giving specifications, quantities and quality description to the Purchasing Department.
  4. Supervise all cooking operations, including methods of preparation and cooking.
  5. The ability to understand and explain profit / loss analysis.
  6. Computer Literate – knowledge of basic computer skills with programs such as Word, Excel, understanding ordering systems, e-mails, and printer.
  7. Must be able to obtain and retain a gaming license through the Tule River Tribe Gaming Commission.

PHYSICAL AND ENVIRONMENTAL:

  1. While performing the duties of this job, the Team Member is required to talk, hear, and stand for an entire shift.
  2. The noise level ranges from low to high.
  3. Must be able to lift and carry up to 50 lbs.
  4. Must be able to work in hot and cold environments.
