Hamilton Island is seeking a passionate and versatile Chef de Partie to join our dedicated Conventions & Events team. With more than 120 corporate functions and 450+ weddings hosted annually – including iconic events like Hamilton Island Race Week, The Great Barrier Feast, and triathlons – this is your chance to cook at the forefront of island events and luxury hospitality.

Your Role

As Chef de Partie, you’ll be a key member of our Conventions team, producing high-quality dishes across a wide range of indoor and outdoor events. You’ll manage your own section, work collaboratively with the team, and help ensure every function runs smoothly and meets our standards of excellence.

Where You’ll Make an Impact

  • Prepare and execute dishes for events ranging from intimate weddings to 1,000-pax conventions.
  • Operate live cooking stations (e.g. BBQs, interactive displays) and support off-site catering setups.
  • Support menu development, food prep, plating, and service logistics.
  • Maintain food quality, consistency, and hygiene standards across every event.
  • Mentor junior chefs and support a strong team culture.
  • Contribute to Hamilton Island’s reputation for delivering world-class events and culinary experiences.

What We’re Looking For

You’re an energetic and creative chef with strong technical skills and the flexibility to adapt to a variety of event formats and locations. You thrive in fast-paced, ever-changing environments and take pride in both your food and your leadership.

To Be Successful, You Will Need:

  • Certificate III in Commercial Cookery (Essential).
  • Minimum 3 years of post-apprenticeship experience.
  • Proven ability to manage your own section and maintain quality under pressure.
  • Experience with luxury hotel banqueting, off-site catering, or upmarket event environments.
  • Valid open manual Australian driver’s licence (Essential).
  • Impeccable grooming, communication, and team leadership skills.
  • A great attitude and a willingness to contribute to team success.
