Hamilton Island is looking for a skilled and passionate Demi Chef to join the culinary team at Catseye Pool Club, a premium seafood-focused venue within our new boutique hotel, The Sundays. Your Role
As Demi Chef, you’ll support the daily operations of the Catseye Pool Club kitchen, assisting in the preparation and service of seafood-focused dishes that reflect the Nilands' innovative and sustainable culinary philosophy. You'll work across various sections of the kitchen, refine your skills, and contribute to delivering consistently exceptional dining experiences.

Where You’ll Make an Impact

  • Prepare and cook seafood and supporting dishes under guidance from senior chefs
  • Uphold high standards in food quality, presentation, and sustainability
  • Work across kitchen stations including grill, cold larder, and fish prep
  • Maintain food hygiene, storage, and safety protocols at all times
  • Contribute to prep for daily service and special event menus
  • Participate in team meetings, briefings, and kitchen handovers

What We’re Looking For
You are a passionate and reliable kitchen professional, eager to build your skills in a supportive and world-class environment. You are detail-oriented, thrive in a fast-paced setting, and are genuinely excited about seafood and sustainability.

To Be Successful, You Will Need:

  • Certificate III in Commercial Cookery (Essential)
  • At least 1–2 years of experience in a commercial kitchen
  • Passion for seafood and an interest in zero-waste cooking methods
  • Strong work ethic, willingness to learn, and a collaborative attitude
  • Ability to work varied shifts including mornings, evenings, weekends, and event service
  • Valid working rights in Australia
  • Manual open driver’s licence (preferred)
