A DAY IN THE LIFE OF OUR BREEZEWAY CHEF DE CUISINE:

The Breezeway Chef de Cuisine is primarily responsible for overseeing, assisting, and supervising the preparation, production, and service of food for A 'La Carte and Banquet operations at the Breezeway Cafe, our open-air restaurant located at our Sports Center, between the pool and the tennis courts. You will be responsible for supervising, training, evaluating, coaching, and counseling the production team staff to club standards. This includes leading the development of Breezeway menus and the writing of standardized recipes, maintaining the overall cleanliness and organization of Breezeway Kitchen, Coolers, and Freezers, and managing daily food production, including Lunch & Dinner Service and Banquets.

JOB SKILLS & REQUIREMENTS:

• Currently possess or working toward American Culinary Federation CSC, CCC or higher certification, OR a minimum of 5 years of management experience in a club kitchen.
• Be in compliance with and actively support a drug-free workplace & pass a background check.
• Maintain a current qualifying Florida Food Managers Certificate
• Be available to work as necessary in season, including banquet functions.
• Be able to spend long periods of time on their feet, walking, standing, and stooping.
• Must be able to pick up and carry up to 50 lbs.
• Must possess extensive knowledge of professional culinary arts, terms, techniques, and skill sets. ACF certification recommended.
• Demonstrates ability to proactively prioritize needs and effectively manage resources and workstations.
• Ability to communicate clearly and professionally with members and teammates, and to stay focused under extreme pressure.
• Must have a drive to achieve high levels of personal and organizational performance to meet or exceed objectives.
