Job Summary

The Manager, Retail Food Services, oversees the daily operation of the café and all other retail food outlets at the UCSF Medical Center Parnassus campus.  Major duties for the position include managing a diverse staff, collaboration with the culinary team to advertise and execute daily menus and theme meals, merchandising food to optimize sales and customer experience, and overseeing safety and sanitation of café operations.  The incumbent will be responsible for financial performance including profit and loss statements and labor productivity for a projected annual budget of $5M.  The Manager also has responsibility for ensuring adherence to all regulatory and safety standards and HACCP standards. This position co-chairs the Retail Food Task Force for the department. 

The final salary and offer components are subject to additional approvals based on UC policy.

Your placement within the salary range is dependent on a number of factors including your work experience and internal equity within this position classification at UCSF. For positions that are represented by a labor union, placement within the salary range will be guided by the rules in the collective bargaining agreement.

The salary range for this position is $122,000 - $132,000 (Annual Rate).

Required Qualifications

  • Five years of experience in food service management or equivalent combination of education and experience. 
  • Strong knowledge in food service and sanitation regulations for The Joint Commission (TJC) and Title 22. Uses HACCP principles to apply to food handling and storage policies and procedures.
  • Strong verbal and written communication skills in the English language, including active listening, dynamic flexibility, and critical thinking, and ability to multi-task and ensure effective time management.
  • Strong decision making and reasoning skills, and ability to develop original ideas to solve problems, and conduct operations analysis and quality control analysis.
  • Strong and effective interpersonal and work leadership skills to provide guidance to all levels of personnel.
  • Intermediate computer application skills to include food service applications for point of sale, kitchen software, label software, digital boards, and inventory control software
  • Ability to work at all campus locations 

Preferred Qualifications

  • Bachelor’s degree or higher, preferably within business, culinary arts, or food service management from an accredited university/college or a dietary manager certification meeting California Title 22 standards. 
  • Valid driver's license and clean driving record.

License/Certification

  • ServSafe® Food Protection Manager Certification or equivalent food protection manager certification recognized by the state of California.  Valid certificate must be on file in department.

Department Description

The UCSF Health Department of Nutrition and Food Services is a high performing and nationally recognized food and nutrition service operation. The department is comprised of three divisions: food service (room service style patient food service, retail food operations including cafes, quick service coffee outlets, a large-scale catering program with conference services, with supporting entities of culinary services, food procurement services, and a business office), retail services (gift and specialty shops), and nutrition services (inpatient and outpatient nutrition services for adults and pediatrics and a dietetic internship).  The entities are primarily based at the five UCSF Health hospital campuses but also at clinics throughout the Bay Area.  The total department has approximately 400 FTE with an overall operating budget of $54M.
